# Cupcakes ## Lemon Cupcakes - Preheat oven to $350 \degree$ F - Combine $1 \frac{1}{4}$ cups flour, $\frac{3}{4}$ tsp. baking powder, $\frac{1}{4}$ tsp. baking soda. - In a separate bowl, combine $\frac{1}{4}$ cup butter, $\frac{3}{4}$ cup sugar, $\frac{1}{4}$ cup vegetable oil, $\frac{1}{4}$ tsp. vaninna - Add 2 eggs. - Combine with half of the dry mixture. Add 6 tbsp. milk, 1 lemon of zest and juce. Stir. Add the rest of the dry ingredients. - Bake for 15-18 minutes at $350 \degree$ F. ### Frosting - Beat 1 cup butter and 4 cups of powdered sugar. Add $\frac{1}{2}$ tsp. vanilla, 4-5 tbsp. lemon juice, 1 tsp. zest, and salt to taste.
